`Enzymes Evolve Beyond Digestion
`By Lisa Schofield
`
`Enzymes have been more prominent in
`hea|th—oriented media within the past
`year, most notably for their roles in
`digestion. But enzymes have more
`heaittvgiving properties.
`
`There is much more to enzymes then

`misconceptions held by consumers.

`the prime movers in the removal of free raciicais," explained
`James Fahey, MD, scientific advisor and consultant to Biotech
`Foods, Huntington Beach, CA.
`
`Doubts-Duty Enzymes
`What is new and exciting, said Tom Bohager, vice president of
`Enzymiedica, Punta Gorcla, FL, "are therapeutic uses for
`typical digestive enzymes."
`
`There are three digestive enzymes that he said have strong
`and growing bodies of research suotfisning their rnetahotic
`functions. These include tioase, amylase and protease.
`
`° Lipase, which normally digests fats, when taken on an empty
`stomach, gets into the bloodstream and can reduce the
`amount of blood fats. it can reduce cholesterot and
`
`trigtycerides, and there is some evidence, Bohager pointed
`out. that tipase can reduce otaoue in the raised. "Lipase has
`some ohetating properties,” he added.
`
`- Amylase, which normally breaks down carbohydrates, can
`regulate histamine ievels when taken on an empty stomach.
`
`- Protease, which digests proteins, “is powertut in keeping as
`healthy when used systemicaity," Bohager said. "Everything
`that gets into our systems to make us sick is either a protein or
`is protected by a protein. Bacteria, fungi and parasites are all
`proteins; viruses and cancer cetls are protected by proteins."
`
`He etaborated that white cetls use protease to break through
`the proteins to destroy the pathogens. When proteasss are
`taken orally on an empty stomach, about at-D to 60 percent of
`the enzymes enter the bloodstream where they bond with

`aipha—2 macroglobulins; this duo seeks and destroys
`pathogenic proteins. Proteases are the oniy dietary
`supptement that actualty becomes part of the immune system;
`a protease supplement is not an immunebooster or
`stimulator. And because it does not stimulate the immune
`
`system, protease can be used safety by those with auto-
`immune disorders.
`
`immune Motivators
`
`Cutler said that enzyme therapy is one of the main adjuncts to
`boosting the immune system and maintaining a healthy
`celluiar environment. Undigested food that leaks into the
`bioocistream (Leaky Gut Syndrome) sets up an ailergic
`response (immune—mediated inflammatory cascade) that wiil
`create symptoms, she said, such as bloating, fatigue, ioint
`pain and migraines. "Taking a ptant-based enzyme
`supplement daily wiil heighten the body's immune response,
`and tower the incidence of those symptoms," she said.
`
`"Peopie aiso need to remember that the number-one biggest
`immune system component of the body is in the gut," she
`added. "This is where more immune activity occurs than
`anywhere."
`
`Aftab Ahmed, Phi), scientific director of Naturaily Vitamins,
`Scottsdale, AZ, pointed out that consumers are often confused
`about the differences between digestive and systemic
`enzymes. "it depends on how the enzymes are made," he
`said.
`
`Normaliy, for an enzyme to work systemicaily, it must be
`entericatty coated to withstand the harsh acidic environment of
`the stomach. This type of enzyme needs to be taken about 45
`minutes prior to any meat to ensure that the digestive process
`does not begin. The enteric coating comes off in the upper
`intestine, and the enzymes are taken intact into the
`bloodstream. They are transported through the bioocistream
`and are protected from digestion by proteoiytic enzymes, then
`deiivered to specific tissues and organs where they witl carry
`out their specific functions.
`
`"it cannot be over—emphasized that systemic enzymes must
`be taken on an empty stomach or they witl be used as
`digestive aids," Ahmed asserted.
`
`As a long—term consequence of eating enzyme-deficient foods,
`the body may begin to exhibit symptoms of chronic disease as
`it is called upon to manufacture more enzymes to make up for
`the paucity it receives orally.

`
`(Blow expiained that research indicates that the human body
`has an enzyme-producing potential and must produce excess
`to make up for the shortage of food enzymes. "The human
`body is capabie of producing ail the necessary enzymes
`required for iifesustaining requirements, provided the
`necessary fuels are made avaitable to it through the
`consumption of enzyme—rich foods," Clow stated.
`
`She added that if foods are digested improperly they can
`ferment in the digestive tract, producing toxins that are then
`absorbed into the bloodstream, possibly causing various
`itlnesses. And, like a vicious circle, chronic iltness can deplete
`enzyme stores.
`
`There is a handful of enzyme supplements targeted toward
`systemic support. Among these, are Naturailyfis Wobenzyme,
`W-Zyme, from Michael's Naturopathic Programs; l\/legazyme
`from Enzymatic Therapy, and the new Rutozyrne from
`Naturally.
`
`Rutozyme, described Ahmed, combines various systemic
`enzymes with a bioflavonoid complex based on rutin.
`Rutozyrnes main function is to maintain healthy viscosity of
`the blood, and to "ciean up" cetlular debris (e.g., fibrin) in the
`bloodstream. The enzyme comptex may also tower the
`inflammation response, and contains white witlow bark to
`address pain.
`
`Fahey noted that several clinical studies he recentiy
`sponsored show that Biotec Foods’ Stress Release cataiytic
`enzyme product has the ability to enhance and hasten the
`activity of glucosamine, chohdroitin and MSM in the
`bloodstream. "Free radicats are removed from the body,
`bringing quick relief from stiffness and soreness in the joints,“
`he said.

`molds."
`
`Piantwbased enzymes, also known as fungal or microbial
`enzymes, said Bohager, are the most effective digestors of
`fats, proteins and carbohydrates, and are actually about 100
`times more effective in these actions than the other two
`
`groups. "About 80 percent of digestive enzyme supplements
`are piant—based," he said.
`
`Besides the plant~based enzymes, there are also the plant
`enzymes bromeiain and papain, and gtandutars. Glandulars
`includes pancreatin, trypsin, and chymotrypsin, which support
`the organs and glands of the body that are responsibie for
`secreting digestive enzymes. They also vvorit well, Bohager
`noted, as anti-inftarnmatories, but are poor digestors of fats,
`proteins and oarbs. "if a customer wants digestive assistance
`in food breakdown, glandular enzymes are not the way to go,"
`he said. "They are great choices for retieving stress on the
`pancreas and liver, and for sports injuries and arthritis, along
`with other inflammatory issues."
`
`Animal enzymes, said McKay, are limited in where they will
`work and on what they wilt work. Pepsin supplements (animai
`derived) "only work in the stomach to digest proteins.
`Pancreatic enzymes, such as pancreatin, are also animal
`derived, and work solely in the small intestine to digest carbs
`and proteins," she explained.
`
`Enzyme Misconceptions
`There are several misconceptions among consumers, say
`sources for this story. One, pointed out McKay, is that
`enzymes are destroyed in the stomach. "if an enzyme is in an
`improper environment, itjust lies dormant until it arrives in the
`environment in which it works."
`
`Another false belief is that if one takes digestive enzymes
`daiiy for a while, the body will cease producing its own
`enzymes. "There are iiteraily hundreds of sites within the body
`where enzymes are produced," Evlckiay said. "Primarity, the
`major enzyme manufacturing= centers are the stomach and
`small intestine."
`
`Cutter said there are many doctors who betieve that enzymes
`are destroyed in the gut and not utilized, and that enzymes are
`even addictive. "Also, some people believe that they are
`replacing their own digestive enzyme supply when they take
`digestive enzymes; this is not true. We are just supplernenting
`with plant enzymes norrnaliy found in food. Those peopte who
`don't eat raw whole fruits and vegetabies and who don't chew

`their‘ food thoroughly dcin‘t have enough enzymes to predigest
`the food. This then places a burden on the digestive system to
`do all the digesting; the body is working harder than it shouid
`Peopie are therefore suppiementing what‘s missing, not
`repiactng."
`
`Glow added that digestive enzymes are secreted along the
`healthy gastrointestinal tract and from the pancreas to aliow
`reiease of nutrients from foods. "i don't beiieve it is possible to
`increase the biologioai ability to produce enzymes, but by
`eating raw foods and taking enzyme supplements, we may be
`abte to preserve and repienisn our endogenous enzyme
`tevels," she riemarked.
`
`Donna Werner, EC, director of technical services for
`En2.ymes, ins, pointed out that hath retaiiers and aensnmers
`simuld know new to read the iabel at an enzyme supplement.
`"Activity is the key to enzyme effectiveness," she stated.
`"While the labels of some enzyme suppternentis show
`measurements in weight (e.g,, mg), enzyme weight does not
`equal enzyrrie activity.“
`
`Werner added that the Food Cherniizal Codex (FCC) is the
`standard recognized by the FDA, and is the natidnai standard
`used to evaluate vegetarian enzyme activity. “For prcitease,
`look for HUT; for amyiase, DU; for iipase, LU; and for
`oetlulase, CU."
`
`Even though the FCC designations are used for enzyme
`suppiements, {Slow said. unfortunately, there is no universatly
`accepted method for manufacturers to use when indicating the
`potenoies of their enzyme products. The FCC method is
`preterabie over miiligrarn measurements because it measures
`actual activity. The FCC designation is similar in function to
`the USP designation for pancreatic enzymes. Some
`coniaanies aiso state GDU (geiatin digesting unit} as the unit
`of activity.
`
`"The problem with using this unit of measurement is that there
`is no central regutating standard for how companies determine
`their own GDU." she pointed out. Companies wiii use different
`temperatures, pH ievels, or different types of getatin as part of
`their testing methods. This makes it airnost impossible to
`coinnare units. even with other companies that use GDUS,
`
`"it is futite to try to compare potencies from one unit of
`measurement to another. it would be ideal if alt companies
`that manufactured pianbbased enzymes wonid convert to the
`FCC standard of measurement for the sake of clarity for
`enzyme consumers."
